Quinoa Vegetable Soup

I recently changed my eating habits and am trying to eat no White carbs. I made a delicious soup last night with quinoa and lots of vegetables. Very healthy and tasty!

What I used:
2 diced carrots
2 diced celery stalks
1 diced onion
2 diced tomatoes
3 garlic cloves
1/4 head of chopped cabbage
1/2 green bell pepper
salt and pepper
Pinch of Cayenne pepper
Pinch of Ground cumin
Pinch of crushed red peppers
5 cups of water
4 tsp of chicken bouillon
1 cup of quinoa

Add carrots, celery, onion, tomatoes, garlic, and bell pepper in a pot with a small amount of olive oil. Let the vegetables soften. Then add 1 cup quinoa, 5 cups of water, chicken bouillon, salt, pepper, cayenne pepper, ground cumin, and crushed red peppers. Stir and bring to a boil. Then add cabbage and simmer for 20 minutes.

There are a lot of ingredients, however you can substitute your favorite veggies or what you have in the house. Very simple and yummy!
