Easy Thai Chicken Salad

My mom was visiting us here on the coast and made this delicious Thai Chicken Salad. It was simple to make, healthy, and very tasty.

Here is what you will need:

  • 2 chicken breasts (we bought an oven roasted chicken from the store)
  • Chopped leaf lettuce
  • Diced cucumber
  • Sliced green onion
  • Strips of red pepper
  • Chow Mein noodles

For the dressing:

  • 3 Tablespoons of lime juice
  • 1 1/2 tablespoons olive oil
  • 1 1/2 tablespoons sesame oil
  • 3 teaspoons of sugar
  • 1 1/2 teaspoons soy sauce
  • 1-2 minced garlic cloves

We kept all of the toppings on the side so everyone could add as much of each item as they wanted. Make sure to whisk the dressing to fully combine the ingredients
