Meatless Monday: Fruit and Veggie Smoothies

Smoothies have been the new thing in our household this past week. Not only are they super tasty, but very healthy as well. For lunches I have been making smoothies with all kinds of different fruits and veggies. A couple of them turned out really good and here is what I used.

Today I made this delicious smoothie, probably my favorite so far. This recipe made one large smoothie.

  • 1 cup Almond milk
  • 3/4 cup carrot juice
  • Small handful of spinach
  • 1/2 fresh banana
  • 4 fresh strawberries
  • 1/2 cup of frozen raspberry and blueberry mixture
  • 4 one inch frozen mango cubes

This smoothie is very green and may not look appetizing, but certainly was. Again this recipe is for one large smoothie.

  • 1 cup almond milk
  • 1/2 cup of green goodness juice
  • 1/4 cup of carrot juice
  • Small handful of spinach
  • Handful of frozen strawberries, mango, pineapple mixture
  • Half frozen banana
  • Teaspoon of ground flax seed

There are so many options when making smoothies. I strongly suggest trying carrot juice and spinach though. They may not sound appetizing, but as long as you don’t put too much in to the mixture, the flavor it adds is very mild. My husband bought fresh kale the other day and actually made a smoothie with two large pieces and it was quite tasty. I may get adventurous and try kale in my next smoothie.
