Meatless Monday: Egg and Vegetable Burrito

Tonight my husband made delicious egg burritos with vegetables and cheese. The flavor these burritos had was amazing. After I took a bite I asked him what kind of seasoning he put in and he said just one garlic clove and salt. All I could say was wow!

Ingredients (Enough to make 4 burritos):

  • 6 eggs
  • 4-5 mushrooms
  • 2 green onions
  • 1 roma tomato
  • 4 Tablespoons of almond milk
  • 1 clove garlic
  • Shredded cheese
  • salt to taste
  • tortillas

Dice the mushrooms and simmer in a pan sprayed with Pam.

Add the green onion and one clove of diced garlic . Simmer for another couple of minutes.

Add almond milk to the eggs and whisk together. The almond milk adds a wonderful flavor to the eggs. No butter necessary.

Remove the vegetables from the pan, spray again with Pam, and add the eggs.

Add the vegetables back into the pan and shred some cheese on top.

Stir and cook until the eggs are fully cooked.

Add the tomato and salt to taste.

Heat the tortillas in a pan and add some shredded cheese.

Spread the egg filling and then roll up the burrito.

These burritos were very simple and extremely tasty.
